Hilton Amman Showcases Jordan’s Flavours

Signia by Hilton Amman has taken centre stage at the Jordan International Food Festival, presenting an innovative culinary journey that celebrated Jordan’s gastronomic heritage while reimagining it with international flair.

Leading the showcase was Executive Chef Mohammad Tanbour, whose approach combined authenticity with creativity. His mission was to honour Jordan’s produce while elevating traditional flavours through refined, modern techniques. Guests were invited to experience Jordanian cuisine in unexpected ways, blending the familiar with the inventive.

At the heart of the evening was a six-course tasting menu created in collaboration with Michelin-starred chefs David and Noelle Faure. Renowned for their bold Mediterranean cuisine, the chefs worked alongside Tanbour to present dishes that bridged Jordanian tradition with global artistry. Highlights included an orange-lacquered foie gras and black kebbeh infused with truffle – dishes that paired texture with innovation while staying rooted in regional culinary identity.

The dining experience extended beyond the savoury courses. The Faures captivated the audience with a theatrical dessert preparation, using liquid nitrogen to craft snowballs infused with rose, raspberry, and saffron. This interactive finale reflected the spirit of the festival: immersive, surprising, and celebratory of Jordanian ingredients.

The event underscored Signia by Hilton Amman’s growing reputation as a hub of culinary excellence in the region. More than just a showcase of flavours, the property positioned itself as a destination for travellers seeking world-class dining experiences rooted in local culture.

The Jordan International Food Festival provided the perfect stage for this commitment. By bringing together local produce, international chefs, and creative innovation, the festival highlighted Jordan’s rising status as a culinary destination in the Middle East.

For Hilton Amman, the participation was not only about presenting refined dishes but also about celebrating Jordan’s role in the wider travel and hospitality landscape. The blending of Jordanian tradition with global innovation echoed the Kingdom’s efforts to position itself as a cultural and gastronomic destination for international visitors.
