This week we speak to chef Axel Godefroid from the prestigious Ritz-Carlton Abu Dhabi, Grand Canal.

How would you describe working in the Grand Canal kitchen?

The kitchen at The Ritz-Carlton Abu Dhabi is definitely one of the best kitchens I’ve ever worked in. With the large number and diversity of restaurants we have here, managing the day-to-day kitchen operations can get quite challenging at times, but I am very lucky to have a motivated and talented team of chefs working togeher to create an excellent team.

Who would you most like to cook for? 

I had the honour of meeting and talking to His Highness Sheikh Mohamed bin Zayed Al Nahyan and the encounter left a lasting impression on me. I would love to cook a meal for His Highness and have a chat about food aswell.

What are your impressions of Abu Dhabi and how does it compare to your home country?

What makes Abu Dhabi different to Belgium, my home country, is the fact that it’s so multicultural and you can easily find a bit of everything here. Back home where things tend to be more conservative and traditional when it comes to food, this kind of diversity is not easy to come by.

What can diners expect from the Ritz-Carlton Abu Dhabi? 

We have a wide variety of outlets where diners can enjoy different types of food; traditional Lebanese cuisine in Mijana, dim sum and noodles in Li Jiang, and gourmet cakes and desserts in Dolce. We also have a traditional steakhouse focusing on high quality cuts, a Mediterranean all-day dining restaurant, a lobby bar with live entertainment, and the famous Ritz-Carlton afternoon tea in Alba.
