The result of a nearly 500-year melting pot of Spanish, African, Japanese and Chinese immigration and native Quechua culture is on the lips of top chefs worldwide. Peruvian food features a lot of seafood and potato dishes with a Japanese influence. Many of the most popular recipes, including anticuchos (grilled skewers of marinated meats and shellfish), will remind diners of their favourite Japanese dishes with a twist.
