Head over to the El Sombrero from 22nd to 28th of April and discover 'mole', one of Mexico's most famous versatile foods. Mole is the generic name for a number of sauces used in Mexican cuisine, as well as for dishes based on these sauces. Outside of Mexico, it often refers to a specific sauce which is known by the name 'mole poblano'.
