Crêpes Suzette

We can’t think of a better way to celebrate Valentine’s Day with your sweetie than with a delicious dessert! Pastry chef Anubhav Sethi of Holiday Inn Abu Dhabi provided this recipe to help you sweeten the day. He says, “This easy-to-make crepe will add that extra zing of sweet romance to your Valentine’s Day!”

Ingredients:

For the crêpes:

  • 120g flour
  • Pinch of cinnamon
  • Four eggs
  • 280ml milk
  • 80g butter
  • 10g sugar

For the sauce:

  • 150ml orange juice
  • 30g castor sugar
  • 15g butter
  • One vanilla bean
  • One orange


Method:

  1. For the crêpe batter, mix all ingredients other than the butter in a bowl. Make sure no lumps of flour are formed
  2. Melt the butter and add into the batter
  3. Heat a non-stick pan and pour just enough batter to thinly coat the bottom of the pan
  4. Cook until the edges turn slightly brown
  5. Using a fork, lift the crêpe from the edge and fold in half. Fold in half again to get a neat triangle and remove from the pan
  6. Keep the crepes in a sugar dusted tray so that they don’t stick to each other
  7. For the sauce, use a grater to take out the zest of the orange and add it into the orange juice
  8. In a pan, heat the butter and sugar until it turns golden brown. Be careful to not to burn the sugar
  9. Add the orange juice and vanilla
  10. Once the sugar dissolves into the juice, add crêpes into the sauce and cook for a minute
  11. Serve hot, with some strawberries and a scoop of vanilla ice cream
