Emirati Sago Pudding

Translated and edited by food blogger May Al Badi, we agree there is no better way to celebrate the holiday then indulging in a bit of delicious dessert!

Ingredients:

  • 250g sago pearls that have been rinsed in water
  • ¾ c sugar
  • 1 tsp ghee
  • 1 litre water
  • 1 tsp saffron threads
  • Pinch of cardamon powder
  • Roasted nuts, for decoration (optional)


Method:

  1. Caramelise the sugar in a big pot
  2. Pour water onto the caramelised sugar and stir until fully dissolved
  3. Add saffron threads to the mixture
  4. Add the ghee and sago pearls and stir on medium heat for fifteen to twenty minutes or until the sago becomes translucent and the mixture thickens
  5. Add the cardamon powder and stir in before serving
  6. Decorate with extra saffron threads and roasted nuts
  7. Enjoy!
