In honour of the new season Crowne Plaza Abu Dhabi is hosting an asparagus promotion at their restaurant, Spaccanapoli, for the month of May.
New Italian Chef Massiliano Marino prepared a sweet delight with a surprising ingredient to help readers beat the summer heat. He said: “Since asparagus is a seasonal vegetable, we wanted our guests to experience the delights of this veggie”.
Ingredients:
- 200g asparagus
- 4 egg yolks
- 50g sugar
- 2 egg whites
- 250g whipping cream
- 80g Icing sugar
Method:
- Sauté the asparagus in butter untilhalf cooked, then blend to make a smooth paste
- Place the egg yolks in a mixing bowl along with the sugar and whisk
- Whip up the egg whites like a meringue in a separate bowl
- Finally, in a clean bowl mix the whipping cream with icing sugar and whip
- Mix the egg yolk mixture with the egg white and slowly add in the asparagus and the cream mixture
- Set the mixture in a mould and freeze
