Prawns in chili-garlic olive oil

Lemon Tree restaurant at The Holiday Inn Abu Dhabi has some truly mouthwatering new dishes on its Spanish menu, courtesy of Chef Feras Barakat. This recipe for prawns in chili-garlic olive oil provides the perfect start to any meal.

Ingredients

                          • 750gms of king prawns
                          • 60gms garlic (sliced)
                          • One red chili (dry)
                          • 150gms olive oil (extra virgin)
                          • 5gms chopped parsley
                          • Salt to taste
                          • Four lemon wedges

                                            Method
                                                1. Peel the prawns, clean and wash under cold running water
                                                2. Heat a saute pan and add olive oil to it, over a medium flame
                                                3. Slit open the dry chili from one end and remove the seeds. Add to the pan
                                                4. Add sliced garlic together with prawns and cook for two to three minutes
                                                5. Turn the prawns and cook for another two to three minutes or until done
                                                6. Add salt to taste
                                                7. Once the prawns are cooked, add chopped parsley, mix it, nicely coating the prawns
                                                8. Serve on a small starter plate by arranging the prawns side by side.
                                                9. Pour over all the oil and garnish with chopped parsley and lemon wedge
