Beef bulgogi

Chef Ickbeom Kwon is serving up a whole host of authentic Korean dishes at Holiday Inn Abu Dhabi. The new Korean chef joined the Silk Route Café to help cook up some popular native favourites – including the beef bulgogi – as part of the hotel’s weekly Korean nights.

“This is a delicious and wonderfully easy recipe to recreate at home. It is personally one of my favourite dishes – to make – and to eat!” he says.

Ingredients

                • 40ml Korean soy sauce
                • 15ml Korean rice syrup
                • 10g sugar
                • 30g leeks
                • 8g/3 cloves fresh garlic, peeled
                • and chopped
                • a pinch of white pepper powder
                • a pinch of white sesame seed
                • 10ml Korean sesame oil
                • 30g button mushrooms, sliced
                • 150g onion, peeled and sliced
                • 250g beef, cut into strips
                        Method
                          1. Marinate the beef in the soya sauce, rice syrup, sugar, white pepper and sesame oil. Keep in the fridge for at least 24 hours to allow the flavours to mix
                          2. Sauté the beef in a pan. When the beef is half done, add in the onions, mushrooms and the leeks
                          3. Cover and cook for around five minutes until the beef and all the vegetables are cooked
                          4. To serve, sprinkle the sesame seeds on top for garnish. To accompany, add a portion of kimchi and steamed rice to the plate
