Tortino chocolate

South Italian chef Andrea Molinari has been cooking up a storm since joining La Mamma restaurant at Sheraton Abu Dhabi Hotel and Resort in January this year.

“I’m really enjoy working in Abu Dhabi and especially with the Sheraton – it’s a great new culinary and cultural experience. This tortino recipe is just one of my new favourites to make in the La Mamma restaurant.”

Ingredients

                • 140g sugar
                • 80g flour
                • 4 egg yolk
                • 6 eggs, whole
                • 180g butter
                • 200g dark chocolate
                • 30g vanilla ice cream
                • 5g berry compote

                          Method
                              1. Using an electric whisk beat the sugar in with the egg yolk and whole eggs until fluffy. Using a spoon, add in the flour
                              2. Melt the butter and dark chocolate in a bain marie
                              3. Add the melted butter and chocolate to the egg mixture before the butter and chocolate cool. Mix all together in a smooth compost
                              4. Coat the sides and bottom of a muffin cup with butter and sugar and fill three-quarters full with the mixture
                              5. Heat the oven to 180oC and cook the tortino for 12 minutes
                              6. Arrange the tortino on a plate with berry compote and a scoop of vanilla ice cream on top before serving. (Serves one)
