Ingredients
- 3 egg yolks
- 125g sugar
- 440g mascarpone cheese
- 4 egg whites
- 16 plain biscuits
- 5g coco powder
- 50g instant coffee
- 5 red currents
Method
- In a mixing bowl beat the egg yolks and sugar together and add mascarpone cheese
- Beat the egg white and add to into the mix
- Pour two cups of water in a mixing bowl and stir in instant coffee
- Dip the sixteen pieces of biscuits into the coffee mixture and place in a serving dish side by side
- Spread half of the cream mixture over biscuits once they’ve been dipped into the coffee mixture
- Spread the remaining cream mixture over the biscuits and refrigerate at least three hours
- Sprinkle with coco powder before serving keep red current on top
