Ingredients

        • 3 egg yolks
        • 125g sugar
        • 440g mascarpone cheese
        • 4 egg whites
        • 16 plain biscuits
        • 5g coco powder
        • 50g instant coffee
        • 5 red currents

             

              Method

                1. In a mixing bowl beat the egg yolks and sugar together and add mascarpone cheese
                2. Beat the egg white and add to into the mix
                3. Pour two cups of water in a mixing bowl and stir in instant coffee
                4. Dip the sixteen pieces of biscuits into the coffee mixture and place in a serving dish side by side
                5. Spread half of the cream mixture over biscuits once they’ve been dipped into the coffee mixture
                6. Spread the remaining cream mixture over the biscuits and refrigerate at least three hours
                7. Sprinkle with coco powder before serving keep red current on top
