Baked goat’s cheese

Ingredients

  • 400g goat’s cheese
  • 20g black olives, sliced
  • 3g thyme
  • 30ml extra virgin olive oil
  • 50ml sun dried tomato vinaigrette
  • 4 filo pastry sheets
  • 200g assorted lettuce

Method

  1. Mash the goat’s cheese with a fork
  2. Marinate the cheese with olive oil, chopped olives and thyme and seasoning
  3. Prepare the dressing with sundried tomato, olive oil and red vinegar
  4. Stuff around 80 grams of cheese in a filo wrap and enclose it from the top forming like a money bag
  5. Bake in oven for ten minutes, until golden brown and crisp at 180°c
  6. Arrange assorted lettuce on the plate with dressing around
  7. Place the filo cheese and serve warm
