Ingredients
- 400g goat’s cheese
- 20g black olives, sliced
- 3g thyme
- 30ml extra virgin olive oil
- 50ml sun dried tomato vinaigrette
- 4 filo pastry sheets
- 200g assorted lettuce
Method
- Mash the goat’s cheese with a fork
- Marinate the cheese with olive oil, chopped olives and thyme and seasoning
- Prepare the dressing with sundried tomato, olive oil and red vinegar
- Stuff around 80 grams of cheese in a filo wrap and enclose it from the top forming like a money bag
- Bake in oven for ten minutes, until golden brown and crisp at 180°c
- Arrange assorted lettuce on the plate with dressing around
- Place the filo cheese and serve warm
