Spicy sizzling beef from Chef Anura at Abu Dhabi Citi Golf Club.
Ingredients
Basic recipe:
720g thinly sliced beef tenderloin
160g green capsicum
160g leeks (white part only)
120g carrots
80g onions
2 tsp ginger garlic paste
2 tsp Chinese black bean sauce
1 tsp crushed pepper
100ml chicken stock
1 tbsp corn flour
2 tbsp corn oil
1 tsp sesame oil
Method
- Cut all the vegetables into thin slices.
- Sauté the ginger garlic paste in corn oil; add the thinly-sliced beef and sauté for a further three to four minutes.
- Add the sliced vegetables and sauté for another two to three minutes
- Add the chicken stock, the black bean sauce and the crushed pepper
- Bring all the ingredients to boiling point and add the cornflour; ensure the flour is fully dissolved in the sauce.
- Remove from heat and finish off with a drizzle of sesame oil for extra flavour.
- Serving suggestion: the dish is best served on a sizzling platter, together with Chinese vegetable fried rice and chilli vinegar.
